Zucchini is a vegetable that belongs to the Cucurbitaceae family. This family comprises about 850 species of plants, mostly herbaceous, climbing or creeping, producing large fruit and protected by a firm crust. Fruits such as watermelon and cantaloupe are in this same family, along with vegetables as common as cucumber or squash. The origin of the zucchini is not well known. No one knows for sure if it comes from South Asia or Central America. What is known is that it is a plant cultivated in all warm regions of the Earth from time immemorial. There is evidence that this vegetable was already consumed by the Egyptians and later by Greeks and Romans. However, it was the Arabs who spread their culture by the Mediterranean regions, where it became a commonly consumed food in the Middle Ages. In areas of northern Europe, its use was later and did not take place until the Second World War. Currently, its use is widespread in all Mediterranean countries, as well as in Holland and North America. Morocco, Italy and Spain are the major producing countries.
