The cultivation of cucumber identified with the history of mankind. Native to southern Asia, was cultivated in India over 3,000 years. In Greece and Rome was taken as food by the Romans and spread throughout Europe and later settlers to America. It is of the Cucurbitaceae family and a temperate climate needs to be grown in optimum conditions. Rich in water, is associated with summer salads and gazpacho. It must be eaten fresh, preferably with the skin. Conventional wisdom attributes the health beneficial properties in the treatment of gout, obesity and heart disease. It is also noted as relief of tired eyes and inflamed, for the sting of wasps and especially as a mask for the skin.
